You don't need to remove the " 3.10.23" one.
Just put a "2.6.X" in place, tell you lilo (probably) that you want to boot that one, and restart.
If no go, enter rescue mode and put things straight again.

Also, why did ovh modify debian squeeze, upgrading the kernel ?
Perhaps 2.6 kernel will not be compatible with the hardware ?
